Our Communications and Engagement Sustainability Ambassador, Kara Dulai, shares with us this incredibly delicious vegan recipe, packed with flavour. Kara's role is to promote all things sustainability through the use of content and blogs.

This recipe is perfect for anyone short on time but still looking for a healthy and nutritious meal this Veganuary. This recipe only takes about 15- 20 minutes to whip up too.

Ingredients for One Serving:

Pasta of your choice

1 ripe avocado

2 handfuls of spinach

1 tablespoon of tahini (or any nut butter for texture and flavour)

Juice of half a lemon

Half a stock cube

Salt and pepper, to taste

½ teaspoon of mixed herbs and some rosemary

Optional: Fresh basil for an extra flavour twist

Enhance Your Sauce with These Suggested Add-Ons:

Half a can of cannellini beans (or beans of your choice)

1-2 handfuls of leafy salad. Can add rocket

Simple steps to make:

  1. Pasta Preparation: Start by bringing a pot of water to a boil and cook your chosen pasta. This ensures that your pasta is ready and warm just in time to be combined with the sauce.
  2. Sauce Creation: In your blender, combine the ripe avocado, fresh spinach, tahini, freshly squeezed lemon juice, half a stock cube, a dash of salt and pepper, mixed herbs, and a hint of rosemary. Blend until you achieve a smooth consistency, adding a bit of water as needed to adjust the texture. If available, toss in some fresh basil to add an extra layer of flavour.
  3. Beans Preparation: Heat a little oil in a pan and sauté your choice of beans – I choose cannellini beans – season them with a pinch of salt and pepper.
  4. Sauce and Bean Fusion: Once the beans are ready, pour in the avocado sauce and gently heat it, allowing the flavours to meld together. At the last moment, stir in a handful or two of a leafy green, such as rocket, to maintain its crispness and texture.
  5. Final Assembly: Introduce the cooked pasta into the pan, combining it thoroughly with the sauce and bean mixture. Here’s where you can get creative - add any additional toppings of your choice to customize the dish to your liking, enhancing the texture or flavour as per your preference.
